The first book contains descriptions of the preparation of dishes from the times of the Union, which needed to be adapted to modern conditions, which is what Chadeika did. Recipes according to GOST take you back to childhood and allow you to feel that unforgettable taste of baked goods and desserts again. And the publication “All about Pies” collected the best recipes from Irina’s first two books.

Capital cupcake: what do you need to prepare?

Required ingredients:

  • butter - 175 grams;
  • sugar - 175 grams;
  • egg without shell - 140 grams (that's about 3 small eggs);
  • flour - 240 grams;
  • raisins, washed and dried - 175 grams;
  • vanilla essence - 2 drops;
  • powdered sugar;
  • salt.

Curd cake: what do you need to prepare?

Required ingredients:

  • flour - 150 grams;
  • butter - 75 grams;
  • sugar - 165 grams;
  • cottage cheese 18% fat - 130 grams;
  • egg without shell - 80 grams (this is about 2 small eggs);
  • baking powder - ½ teaspoon;
  • powdered sugar.

Pastila according to old recipes

Required ingredients:

  • Antonovka apples - 5 pieces;
  • sugar - 170 grams;
  • egg white - 1 piece;
  • powdered sugar.

Cooking process:

  1. Bake the apples in the oven or microwave until fully cooked. Scoop out the pulp with a spoon and puree it using a blender or fine sieve.
  2. Add sugar to the warm apple mixture and stir. Leave to cool.
  3. Add egg white to the cold puree and beat with a mixer until it becomes a white fluffy mass. This will take about seven minutes.
  4. Set aside a glass of the resulting mixture. You'll need it later. Place the rest of the mixture in a rectangular pan measuring 20 x 30 centimeters, which is lined with a layer thickness of three centimeters.
  5. Dry in the oven at 70°C for 5-8 hours. After half the time, it is recommended to turn the marshmallow over.
  6. Then remove the parchment. If it does not separate well, you should moisten it a little with water.
  7. Cut the resulting rectangle lengthwise into three strips of equal width. Coat each of them with the remaining mixture, stack on top of each other and coat with it from the outer edges.
  8. Place in the oven for another two hours.
  9. After the time has passed, remove the finished marshmallow from the oven and rub powdered sugar into it.

As Chadeika writes, pastille according to old recipes will turn out lighter the lower the temperature is maintained in the oven.

Cake “Prague”: what is needed to prepare?

Ingredients required for baking sponge cake:

  • chicken egg - 6 pieces;
  • sugar - 150 grams;
  • cocoa powder - 25 grams;
  • butter - 40 grams;
  • flour - 115 grams.

Ingredients needed to prepare the cream:

  • egg yolk - 1 piece;
  • cocoa powder - 10 grams;
  • butter - 200 grams;
  • condensed milk - 120 grams;
  • water - 20 grams;
  • vanilla sugar - 1 packet.

Ingredients for chocolate icing:

  • apricot jam - 55 grams;
  • dark chocolate - 60 grams;
  • butter - 60 grams.

Conversation between two Irins.

1. Irina, we don’t know each other closely. But I have a feeling that I’ve known you for quite a long time. Probably, we are just like-minded people. My first question is quite traditional. Tell us a little about your childhood. Where are you from, who are your parents, what do you remember about it?

I was born and raised in a city that will forever remain in my heart, this is Sochi. A city near the bluest Black Sea in the world. My childhood coincided with the years of Khrushchev's thaw and Brezhnev's stagnation. This is what people now call the happiest years of my life.

Despite the fact that then, basically, everyone lived modestly, we were glad that there was a peaceful sky above our heads, simple tasty food on the table, and true true friends in the yard. It was then that someone moved to a Mercedes and stopped saying hello, and then everyone was equal before the Communist Party and mom and dad, they loved to play war games, hide and seek, and sacredly observed the unwritten code of honor. Don’t snitch, don’t whine if it hurts, don’t betray your friend, no matter what...

My mother worked as a cook for many years, but she never liked to cook. Life turned out so that she wanted to be a lawyer, but she had to feed vacationers in a sanatorium. She is now well versed in Russian and world literature and the intricacies of the Criminal Code. She considers the books by Marinina and Dontsova to be nonsense - she “figures out” who the main villain is in half a turn.

Dad worked as a music teacher. He is a self-taught musician from a Polish village lost in the Caucasus mountains, and was admitted to the conservatory in the accordion and accordion class without exams. All his life he taught loafers to play an undeservedly unappreciated instrument.

2. I know that you graduated from music school. Tell me, was it your desire or did your parents insist on studying back then? Do you remember that time now? Do you play something for the soul?

Playing the piano has been my cherished dream since I first saw this instrument. I entered music school with pleasure, but I did not study well the first year. I wanted to immediately play something beautiful, but it, this beautiful thing, somehow didn’t work out right away.

Then a wonderful Teacher appeared in my life in the form of a fragile girl. Her name was Victoria Leonidovna Kozlyakovskaya. She taught me to work and get results. But this is not the most important thing! Victoria, a sensitive, deeply intelligent person, taught me to feel music and to grasp the slightest nuances.

I remember when, after the final academic concert in the 3rd grade, when I performed Arensky’s most complex Fantasies on Ryabinin’s themes, the audience first sat dumbly for several seconds, and then there was such a flurry of applause that I sometimes still dream about.

A year later I was playing pieces that are learned in the first years of music school. No, I have never been a virtuoso. But she always played with feeling, and this saved me even if there were some technical flaws. We have maintained a warm relationship with Victoria to this day. Many years ago she got married and moved to Germany, but now, thanks to the Internet, we can communicate freely.

3. Irina, I really remember your comment in my music room on the songs of Elena Kamburova. Then you casually mentioned that it was at Elena’s concert that you met your future husband. Can you tell me a little more about this?

When my husband and I studied at the St. Petersburg Polytechnic Institute, our dormitory often hosted concerts by “informal” and “non-format” artists. We listened to Vysotsky, Gorodnitsky, Sukhanov, Vizbor. Kamburova was a special guest. When she sang, the noisy students of countless nationalities strained their ears so as not to miss a single note or word. She was understandable to everyone because she sang with her soul. At one of her concerts, I felt her gaze. Since then we have been together for 33 years.

4. You and I have never talked about personal things, but I got the impression that you are the happiest woman who lives in Love and harmony. This is true?

Yes, Ira, that's true! Marriages are truly made in Heaven, I know that for sure! Love is an absolute feeling that does not depend on anything. It seems to us that we chose each other, but in fact we were simply destined for each other.

5. I realized that now you live in a village, live a measured, leisurely life, enjoy leisurely time. Irina, has your creative nature accepted rural life so well? Aren't you bored? Do you still have a desire to go somewhere closer to civilization? After all, it’s probably not even possible to go to concerts?

Irochka, I have a very busy life, I never get bored! I can rest when I want, but I always work! My husband and I have two vineyards. One is large and quite old, and we laid the second one last year. Grapes and winemaking are my passion, which takes a lot of time and effort. In addition, we are finishing the house - this is also a concern.

I am friends with very talented local musicians - the group "ROKASH", I translate their songs from Rusyn into Russian so that as many people as possible can not only listen to them with pleasure, but also understand them.

I listen to music at home and watch good concerts. We have a good film projector and an excellent collection of completely diverse music. I enjoy listening to good music in good company. It’s no secret that now it’s not music lovers who go to concerts, but those who simply have money and need to go out into the world to show their involvement in music and stars. In addition, many of my favorite performers are no longer alive and I can only go to their concerts virtually.

When I want to plunge into the atmosphere of a big city, I just go somewhere with my husband for a couple of days. Crazy 3 days somewhere in St. Petersburg, Moscow, Munich, Vienna or Budapest - and I have enough impressions and sensations for a long time. Besides, I don’t feel like a speck of sand in a big city, I’m not part of it. I feel like I'm just a guest, which is completely different. The bustle doesn't stick, the lights seem brighter, and the people seem kinder.

6. In your articles you write such stories...You need to write about this separately. But very briefly, I want to ask, what are your family roots? It seems to me that there are deep aristocrats there for several generations?

No, it seems there were no aristocrats! On my mother’s side - St. Petersburg merchants and Bulgarian intellectuals. But on my father’s side it’s a dark story. His ancestors were poor Polish nobles who took part in the uprising of Yaroslav Dombrowski. For which in 1865 they were exiled forever to the Caucasus.

7. What do you think modern families are missing now? After all, many people have acquired wealth, but that spirituality, subtlety, those reverent feelings are becoming less and less. What do you think about it?

Modern families, in my opinion, lack cordial communication and joint activities that would unite and cement the family. Now everyone is in a hurry, children are quickly assigned to nurseries and kindergartens, or a nanny is hired. And the child needs a mother and father with fairy tales in the evenings and trips to the forest and river, with family traditions of celebrating birthdays and New Years and other events.

Parents believe that if their child is fed and watered, clothed and shod, and placed in a prestigious educational institution, then they have fulfilled their mission. When I was little, there was no talk of any income! But how many warm memories are associated precisely with moments of communication in the family with loved ones. The biggest problem of a modern family is the alienation of loved ones.

8. If possible, please tell us about your children. It seems to me that they received a very decent education and, most importantly, upbringing. You exude calm, reliability, and at the same time everything is combined with a creative approach - I think such a mother grows up to be extraordinary children.

My husband and I have an only son, Alexander. He is already 31 years old, he has his own family, he got married quite early, so we already have big grandchildren. Granddaughter Nastya is 8 and a half years old, and grandson Gleb is 5 and a half. The son graduated from Uzhgorod National University. Works at the Information Center of the Ministry of Justice as a leading engineer. He is seriously involved in cycling - he races around our Carpathians, and has instilled a love for bikes and children. Now the three of them make long trips into the mountains. In addition, his son is working on a project for the “I am Dad” club, which he will soon present on the Internet.

9. Have you ever had moments of despair in your life? If yes, how did you solve such a problem?

There were moments of despair. This was when my son had multiple failed corneal transplants. I coped with such moments of despair with the help of my son. He always said that this is the 21st century and medicine will come up with something else. He himself lives in such a way that no one suspects of his serious problems with vision.

10. What do you never accept in life?

11. You are currently blogging. Tell me, is this your first and only blog? How it all began? Who came up with the idea to create it? How long has your blog been around? Does anyone help you manage it technically?

Yes, this is my first and only blog so far. The idea came to me. At first I just wanted to make a blog about Beregovo, the resort town where we live. But then I realized that such narrow boundaries were bothering me. Later, little stories and recipes somehow began to write themselves. They were liked by blog visitors. So I continue to write my Essays of a Culinary Amateur.

12. Why did you create your blog? Do you believe that in addition to warmth, it can also bring income?

To be honest, I created a blog to earn extra money. But now it’s primarily for further self-expression, and only then for earning money too. There are several ideas I'm working on now. I don't just believe that a blog can make money - I know it!

13. Irina, a completely tactless question from me. But I want to voice it. How did you achieve such attendance? When I see the numbers, I feel really envious.

Irochka! At first I just wrote a lot and commented on other blogs. Then Seryozha Samoilov introduced me to Alexander Borisov. Sasha did a free analysis of my blog, I corrected a lot according to his instructions, and much remains to be done.

Then I bought his course “How to become a blogger with thousands of people,” although at that time the attendance had already exceeded a thousand. I continue to study this course to this day. There's a lot to learn there. I believe that much of the credit for the sharp increase in attendance goes to Sasha Borisov and his course. And I just implement what he recommends, creatively applying knowledge specifically to my topic.

14. Irina, I attended your webinar. I can honestly express my opinion: firstly, I was shocked by such a small number of people who came to the webinar. Were you upset when you saw so many participants? And the second question about this webinar: it turned out that it was canceled due to a thunderstorm. How did you feel about this? It probably just wasn't your day. And the topic for conversation was good.

Irochka! Few people - this is the first time! I’m not such a famous blogger that I can immediately gather a lot of people for a webinar! I'll run it again, just a little later. There are too many things to complete right now. But I don’t want to do it casually or somehow. Of course, I was upset. But all this can be fixed. There will be webinars. There will be many more interesting things.

15. Irina, in conclusion, I would like to ask you this: if you were told that tomorrow you could start life from scratch. What would you like to change in your life? Are there such moments?

I would not have been engaged in a difficult and exhausting business for so long. And I would do everything else the same way!
